Foodie Friday

Hello friends :)

We are back with a delicious spring recipe!! We hope you like your veggies for that one!!

Tagliatelle with courgettes (zucchini) and lemon sauce



1 packet of tagliatelle
1 onion cut into thin strips
300 gr. courgettes/zucchini cut into thin slices
300 gr. French beans
2 tsp lemon zest1
¼ cup of grated parmesan
1/3 cup of single cream2
½ tbsp lemon juice
2 tbsp olive oil


Cook the pasta according to instructions; strain it, preserving 2 cups of the water. Pour the pasta back into the saucepan.
While the pasta is being boiled, heat the olive oil in a frying pan and sauté the onion with the courgettes and the French beans for approximately 8 minutes. Add the lemon zest and stir well for 1 minute. Add all the ingredients from the frying pan into the saucepan with the tagliatelle. Season; add 1 cup of Parmesan, the fresh lemon juice, the crème and the preserved water. Cook on high heat for 2 minutes while stirring occasionally and serve by sprinkling with the remaining Parmesan.
